A Summer Delight: Cardamom & Pistachio Kulfi
Cardamom and dairy are a match made in heaven. The sweet, complex notes of our premium green pods cut through the richness of condensed milk, elevating this traditional Indian ice cream into a gourmet dessert. Because you are using farm-fresh spices, you only need a tiny pinch to get a robust flavor.
Ingredients

1 liter full-fat milk

1/2 cup sweetened condensed milk

1/4 cup sugar (adjust to taste)

1/4 cup unsalted pistachios, finely chopped

Seeds from 4 Thanker Harvest Cardamom pods (ground to a fine powder)

1 tsp rose water (optional)
Instructions

Reduce the Milk: Pour the full-fat milk into a heavy-bottomed wide pan. Bring to a boil, then reduce the heat to low. Simmer, stirring frequently, until the milk has reduced to half its original volume.

Sweeten: Stir in the condensed milk and sugar. Cook for another 5 minutes until the sugar dissolves.

Flavor: Remove from heat. Stir in the freshly ground Thanker Harvest cardamom powder, chopped pistachios, and rose water.

Cool and Mold: Let the mixture cool completely at room temperature. Pour it into Kulfi molds or a freezer-safe container.

Freeze: Freeze for at least 6-8 hours, or overnight. Unmold by dipping the molds briefly in warm water, and serve immediately.
